How to make this easy Nantucket Pie

Preheat the oven to 350° F (175° C) and grease a 10-inch pie plate with melted butter. You may also use a 10 inch cast iron or oven–safe skillet.

After washing and patting dry the cranberries, pour them in the baking dish. Doesn’t need to be perfect, just dump them in.

Sprinkle the berries with chopped nuts and brown sugar.

In a medium bowl, beat the eggs thoroughly. Then, add the sugar a little at a time and beat until light, thick and creamy. If you’re using orange zest in your Christmas pie, add it now.

Stir in vanilla extract, almond extract, flour and salt.

Pour the batter over the cranberries evenly. Tap the baking dish to ensure the batter has worked its way through the berries.

Sprinkle the coarse sugar over the top of the crustless cranberry pie, or wait and sprinkle immediately after removing from the oven.

  • Make it a Cherry Cranberry Pie! Add fresh, pitted red cherries to the cranberries, try 1 heaping cup cranberries and 1 heaping cup cherries, frozen works great here! Or use blackberries, peaches, you name it!
  • Nuts | This Christmas pie is delicious with walnuts, pecans, almonds; you could even try hazelnuts and pine nuts! Or omit the nuts altogether.
  • Orange Cranberry Nantucket pie | While testing, I made one with orange zest and one without. Usually, I love all things cranberry orange (try this Cranberry Relish!), however; personally, I felt like it overpowered the cranberry pie. I sent both batches with my husband to work, and they were BOTH winners, so make it YOURS!

Gluten-Free Nantucket Pie

Replace the flour with GF all-purpose flour (my favorite). Oat or almond flour are also great substitutes in this cranberry nut pie.

High Altitude Cranberry Pie

  • At a high altitude, reduce the sugar in the pie crust by 2 tablespoons. It’s easiest to measure it in the cup, then scoop out 2 tablespoons.
  • Bake as directed, covering towards the end with foil, shiny side down if browning too quickly.

  • If you’re baking in a 9” dish, add another 5-10 minutes of baking time.
  • If the top is browning too quickly on your cranberry crustless pie, cover it with foil. This is a step to take near the end of the bake time.

Once cooled completely, store this pie covered and refrigerated for up to 5 days. It might lose some of its crispness on the top, but will still taste great.

Can I freeze Nantucket cranberry tart?

YES! Make this sweet-tart pie up to two or more weeks in advance, making holiday meal prep even easier!

  • 1 tablespoon butter melted
  • 2 cups cranberries heaping, fresh or frozen* do not thaw frozen
  • ½ cup brown sugar packed light or dark brown (may reduce to ¼ cup) and may replace with sugar substitute or granulated sugar
  • ½ cup walnuts chopped (or pecans), optional omit if preferred
  • 2 large eggs room temp is best, if needed, submerge in a bowl of warm, not hot water 5-7 minutes.
  • 1 cup granulated sugar less two tablespoons for high altitude
  • 1 cup all-purpose flour sub with GF AP flour or Whole Wheat Flour or half and half
  • ¾ cup butter melted
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract or increase vanilla extract if desired
  • ¼ teaspoon kosher salt
  • Zest from ½ to full orange optional
  • Course sparkling white sugar optional

Instructions

  • Preheat oven to 350° F (175° C) and brush a 9-10 inch pie plate or 9” round or square cake pan with 1 tablespoon of melted butter.(If baking in 9-inch bake additional 5-10 minutes)

  • Layer washed and patted dry cranberries on bottom of pie plate, sprinkle with brown sugar and chopped nuts.

  • In a medium mixing bowl, beat the eggs until they are light and thick, gradually add the sugar, whisking well until thoroughly blended and the mixture is light and creamy, add if desired zest from one orange. Stir in flour, salt, vanilla and almond extracts and melted butter until combined.

  • Pour in ribbons evely over the cranberries and spread to even out. Place a thick oven mitt under the pie plate and tap a couple of times to distribute the batter over the cranberries. If using, sprinkle coarse sparkling sugar over the top.

  • Bake the pie for 40-45 minutes until toothpick comes out clean, if browning too quickly, cover the top with a piece of foil. Serve warm or at room temperature with a scoop of vanilla ice cream!
