Why We Love This Recipe

We love making breakfast casserole because of how easy they are to make and the ingredients can be changed. Since our love for Mexican food runs deep, adding the Mexican spices to our traditional breakfast casserole makes it the ultimate breakfast recipe.

Ingredients

Mexican Breakfast Casserole (2)
  • Ground Sausage
  • White Onion (diced)
  • Green Bell Pepper (diced)
  • Minced Garlic
  • Taco Seasoning
  • Salsa
  • Black Beans (15 ounces, rinsed and drained)
  • Frozen Corn
  • Salt
  • Black Pepper
  • Large Eggs
  • Milk
  • Corn Tortillas (cut into quarters)
  • Shredded Mexican Cheese Blend

Variations Ideas

  • Change Meat – Feel free to use different meat to make this casserole. You can substitute with ground turkey, ground beef , Italian sausage or omit the meat.
  • Veggies – Add in vegetables different types of vegetables such as red bell pepper, slice mushrooms, and shredded hash browns or brown potatoes.
  • Cheese – You can easily change the cheese to what you prefer. Substitute the cheese for pepper jack cheese, cheddar cheese, or Colby Monterrey Jack Cheese.
  • Flour Tortillas – Substitute the corn tortillas with flour tortillas.
  • Seasoning – Feel free to change the seasoning to what you prefer. Substitute the taco seasoning with chili powder, cumin, and garlic.

Step by Step Instructions

  • Step 1 – Preheat the oven to 375 degrees Fahrenheit and spray a 9X13 baking dish with non-stick cooking spray.

Step 2 – Brown the sausage in a large skillet over medium high heat, breaking it up as it browns.Remove the sausage from the pan and leave a few tablespoons of the grease left in the pan.

Step 3 – Then add the onions and bell peppers to the pan and sauté for 5-6 minutes until the veggies are soft. Add in the minced garlic and cook for 1 minute.

Step 4 – Stir in the taco seasoning, salsa, black beans and corn. Heat for a few minutes until all the ingredients are heated through and combined.Remove from heat and set aside.

Step 5 – In a separate bowl, whisk together the eggs, milk, salt and pepper.

Step 6 – Then it’s time to prepare the casserole. Layer half of the tortillas into the bottom of the 9X13 pan. Top with half of the sausage mixture, half of the egg mixture and half of the shredded cheese.

Step 7 – Repeat the layers again using up the rest of the ingredients.Pop it in the oven and Bake for 45-55 minutes until the center of the casserole is set (no longer jiggly).

  • Step 8 – Remove the casserole from the oven. Let it rest for 10-15 minutes and then it’s ready to serve with your favorite toppings and enjoy.

  • 1 pound Ground Sausage
