When it comes to indescribably delicious comfort food, nothing surpasses this carnitas recipe. Succulent and meaty, this dish is inexpensive, yet sensational!

The first time I ever tasted pork carnitas was when my friend Mary from Barefeet in the Kitchen made these amazing carnitas! I think we stood at the stove and ate 3/4 of the recipe right off the pan. So good!

What is Carnitas?

Pork carnitas is Mexican pulled pork the word actually means “little meat,” (but there’s nothing small about the huge flavor you’ll get from this recipe)!

Pork for Carnitas: Carnitas meat is best when made from a pork shoulder roast. Tough and flavorful, this economical cut of meat takes especially well to braising on low heat in the slow cooker. After several hours, the fat has dissolved and the pork becomes fall apart tender. It is shredded, spread out on a cookie sheet and popped under the broiler for a few minutes. The resulting crispy brown edges make the meat incredibly scrumptious.

Traditionally, Mexican pork carnitas are braised in oil or lard but we prefer to cook meat in broth, citrus juices, herbs and spices.

Pork for Carnitas

I use a pork shoulder for this recipe. Just likeSlow Cooker Pulled Pork orCrock Pot Pork Chops, this recipe needs a nicely marbled fattier cut of pork. As it cooks low and slow it becomes melt in your mouth tender.

A pork tenderloin is great for making roasted or grilledpork tenderloin but it’s not ideal for slow cooking in this recipe as it’ll dry out.

How to Make Carnitas

This is an easy meal to make, but takes planning, like most slow cooker meals. But I promise, carnitas are well worth the wait! Here’s how to make the best ever slow cooker carnita recipe:

  • CITRUS: Use a vegetable peeler to peel strips off the oranges/lime. We add this to the slow cooker in place of the whole rind for great flavor without the bitter pith (the white part of the orange peel). Juice the oranges and limes.
  • PORK: Brown the pork (again, this just adds more flavor) and add to the slow cooker with all of the other ingredients.

  • SHRED: When the meat is fork tender, pull into small chunks (we prefer this over finely shredded).
  • .CRISP:
    • Broil: Spread the shredded meat on a cookie sheet broil until the edges are deep brown and crispy.
    • Stove Top: Add a bit of olive oil to a hot pan and add pork. Do not stir until browned and crisp on one side.
    • Air Fryer: If you have an airfryer, 4-6 minutes at a high temperature (425°F) will produce the perfect crisp.

Instant Pot Pork Carnitas

Proceed as directed in the recipe increasing the broth by 1/2 cup. If browning the pork in the Instant Pot, be certain to deglaze very well before pressure cooking. If you have little brown bits left on the bottom of the IP, you risk getting the dreaded burn notice.

Cook the pork chunks on high pressure for 30 minutes. Allow for natural release 15 minutes. Broil/crisp as directed.

To Serve Carnitas

Ladle on some more of the pot juices and serve with tortillas, a variety of toppings. Pork carnitas are best served rolled in soft corn tortillas topped with veggies or condiments.

A fun way to serve crispy carnitas tacos is to place a variety of toppings on the table and let everyone pick and choose at will. Include bowls of shredded lettuce, chopped cilantro, sour cream, pico de gallo and shredded cheese.

Pork carnitas are savory and filling, so look for side dishes that are fresh, light, and somewhat acidic or sweet. Try serving it with cucumber salad, or a fresh mango salsa for a heavenly and scrumptious repast. Don’t forget the margaritas!

Transfer everything to a large slow cooker and add a splash of liquid — water is great, but so is broth, apple juice, or beer if you have them handy. Cover and cook on low until the meat is tender and pulls apart easily.

Is it better to cook pork on high or low in slow cooker? ›

Low and slow is always the go for a tender pork roast. Depending on the size of the roast and the type of slow cooker, a pork roast is best cooked on LOW for 6-8 hours.

Do you need liquid in slow cooker for pulled pork? ›

You don't need much liquid to slow cook pork since it releases juices while cooking when using the low setting. I use just enough to flavor the pork along with the reserved juices of the pork and serve the extra BBQ sauce on the side. If you wish to add liquid, you can add 1 cup of chicken broth.

Why do you put orange juice in carnitas? ›

The orange juice in the cooking liquid provides acidity that helps break down the meat so it's extra tender and juicy.

Why do you add milk to carnitas? ›

Adding the oranges is very much like braising pork Cuban-style for the traditional cubano sandwich. The milk acts as a tenderizer, a secret I learned while growing up watching dad make his carnitas which, by the way, were always exceptionally tender.

Why add apple cider vinegar to pulled pork? ›

The acid from the apple cider and apple cider vinegar help to tenderize the meat while also keeping it juicy and flavorful. The low and slow cooking method makes it fall apart as soon as your fork touches it and shreds beautifully.

How do I get more flavor in my pulled pork? ›

We use brown sugar, onion powder, garlic powder, cumin, smoked paprika, a good amount of salt & pepper, and a pinch of cayenne! Make sure you use all of the seasoning! Also, really rub it into the pulled pork, get all of the nooks and crannies!

Why do you put apple cider vinegar in pulled pork? ›

After you've pulled your pork butt, drizzle over the meat and combine. The vinegar adds contrast to the smoky flavor and cuts through the fat in the meat. It also helps mellow out the darker, gamier-tasting parts of the butt. This makes enough for a 8 pound pork butt/shoulder.

Is 4 hours on high the same as 8 hours on low in a slow cooker? ›

The difference between "High" and "Low" on slow cookers seems to differ with every brand and model. One thing that is consistent, though, is that food takes seven to eight hours to reach a simmer point (around 210°) on low; versus three to four hours on high.

How do you know when slow cooker pork is done? ›

One way to determine your porks' doneness is by the color of the juices that come out of it when you poke a hole in it with a knife or fork. If the juices run clear or are very faintly pink, the pork is done cooking. If they're mostly or entirely pink or red, it's best to continue cooking.

Do I need to flip pork in slow cooker? ›

Close the Proofer and allow the pork to cook for a total of 10 or 11 hours. Midway during the slow cook process you can turn the pork over once. After 10 hours check the interior of the pork with a thermometer. We recommend a temperature of 195-200 °F / 90-93 °C for tender, juicy pork which pulls apart easily.

How much liquid do I put in a slow cooker for pulled pork? ›

Your liquid should not cover your pork in the slow cooker: it should only come up about a quarter of the way up the sides. The pork will make more liquid as it cooks, and you need to leave room for that. And 10 hours later, this huge hunk of meat is tender and ready.

How do you keep pork from drying out in a slow cooker? ›

Cooking a lean roast like pork tenderloin in a slow cooker is tricky because it can quickly turn overcooked and dry. We discovered that nestling two tenderloins side by side, alternating the narrow and thicker ends, helped to insulate the meat and prevented it from overcooking.

Can you overcook pork in a slow cooker? ›

Of course you can slow pork too long. You can overcook anything, even with moist heat. Once the meat has cooked completely, become tender and the collagen transforms into gelatin, further cooking will only pull moisture from the meat. It will just become dryer and dryer, even if it is partially submerged in liquid.

How do you keep carnitas from drying out? ›

How do restaurants cook carnitas? ›

Step One: The trick to getting the most flavorful carnitas, is to sear the pork before allowing it to braise for hours.
