Spaghetti Aglio e olio

Spaghetti aglio e oliois a traditionalItalianpastadish fromNaples. It is a typical dish ofNeapolitan cuisineand is widely popular. Its popularity can be attributed to it being simple to prepare and the fact that it makes use of inexpensive, readily available ingredients that have long shelf lives in a pantry.

I was quite surprised when i came across this recipe, because i always thought that pasta taste good when it is had with some strong sauces like tomato sauce or cheese sauce. But this recipe calls for only garlic, chilli and olive oil. So i decided to give it a try.

Yesterday i was starving, so decided to try this because it takes only minutes to make. Frankly speaking the minute when the pasta is done the flavourful oil is done. Then you have to just toss the pasta in this and dig in straight away. Check out chicken piccata recipe too.

Ingredients for Aglio e Olio

  • Spaghetti
  • Olive Oil
  • Garlic
  • Red Chilli Flakes
  • Coriander leaves/ Cilantro

How to Make Aglio Olio

  • Bring water to a boil and add salt to it.
  • Now add in the pasta and cook till al dente or as per package instructions.
  • Drain it and wash with with plenty of cold water till all the starch goes away.
  • Now heat olive oil in a pan and add garlic immediately, so that garlic flavours the oil.
  • When garlic turn light golden. Add chilli flakes and mix well.
  • Now add in coriander leaves and switch off the flame.
  • Add the pasta in and toss well. Serve

Ingredients

  • Spaghetti – 250 gms
  • Olive Oil – 6 tblspn
  • Garlic – 6 fat cloves chopped finely
  • Red Chilli Flakes – 1 tsp
  • Coriander leaves/ Cilantro – 3 tblspn finely chopped
  • Salt to taste
  • Water – to cook pasta

Instructions

  • Bring water to a boil and add salt to it.

  • Now add in the pasta and cook till al dente or as per package instructions. Set aside.

  • Now heat olive oil in a pan and add garlic immediately, so that garlic flavours the oil.

  • When garlic turn light golden. Add chilli flakes and mix well.

  • Now add in coriander leaves and switch off the flame.

  • Add the pasta in and toss well.

  • Serve immediately.

Easy and quick spaghetti aglio e olio with broccoli which has no heavy sauces on them. It clearly focus on pasta alone and the flavour comes from the garlic and chillies.

This pasta has very clean flavours from olive oil, garlic and chillies. The broccoli and broccoli stems adds a nice crunch inbetween them. You can use prawns instead of broccoli in this recipe too.

Ingredients

  • Spaghetti - 100 grams
  • Broccoli - 1 cup cut it into small florets
  • Broccoli Stems - ¼ cup chopped finely
  • Olive Oil - 3 tblsp
  • Garlic - 5 cloves chopped finely
  • Dry Red Chillies - 2 chopped finely
  • Salt to taste
  • Lemon Juice to taste

Instructions

  • Take water in a pot, add salt and bring it to a boil.

  • Add in pasta and cook till done. When it is a minute away from cooking, add broccoli and cook for 30 seconds and drain it well.

  • Heat olive oil in a pan, add garlic and chillies. Saute for 30 seconds.

  • Add broccoli stems and cook for 2 mins.

  • Add in broccoli and stir and cook for 1 min.

  • Add in salt and mix well.

  • Add cooked pasta and lemon juice. Mix well.

  • Serve.
